Strawberry Parfaits {Tasty Treats Thursday}

Personally I think strawberries have to be the best fruit on earth especially in the summer and in a parfait. Here are some delicious strawberry parfait recipes that are sure to hit the spot while it is still so hot!

First up, the "Simple Lemon Strawberry Parfait" found on My Baking Addiction blog. With only 4 main ingredients I am definitely going to try this sweet and tart recipe out!

Another "Lemon Strawberry Parfait" this one was found on Thrifty Things blog. Again another 4 main ingredient parfait, this one without cake, but just as pretty and I am sure delicious!

Next up a "Crunchy Topped Strawberry - Kiwi Parfait" found on Real Mom Kitchen blog. This fruity parfait would make a fabulous breakfast treat, sure to get you going in the morning!

Last but certainly not least..."Strawberry Cheesecake Parfait" found on The Italian Dish blog. No need to heat up the oven on a hot summer day with this no bake cheesecake...dessert heaven!

Strawberry Cannoli Parfaits

Ingredients

• 1 pound strawberries, hulled and sliced
• 3 tablespoons amaretto or orange liqueur
• 2/3 cup heavy cream
• 1/3 cup confectioners' sugar
• 1 cup ricotta cheese
• 1 teaspoon ground cinnamon
• 1/4 cup unsalted pistachios, chopped, optional
• 24 amaretti cookies, crushed
• Miniature semisweet chocolate chips, optional

Directions

In a medium bowl, combine the strawberries and amaretto. Cover and refrigerate at least 3 hours or overnight.

In a large bowl, whip the cream with the confectioners' sugar until soft peaks form (tips curl). In a medium bowl, stir half of the whipped cream into the ricotta to lighten it. Gently fold in the remaining whipped cream andcinnamon. Fold the pistachios into cream mixture.

Place a layer of crushed amaretti cookies in each of 4 parfait glasses. Top each with a layer of strawberry slices and then cannoli cream. Repeat layering. If desired, top with miniature chocolate chips.
