Here is "My Life Squared", some of the moments I captured this week.
Friday I surprised the kids with cupcakes to celebrate only one week of school left before Winter break. I love having my kids home, we have so much fun together!
Saturday Aly had an all day playdate with her best friend. She went to see Frozen and went shopping. Her BFF's Mom bought Aly "Fairbanks" the Beanie Boo Penguin for Christmas. She was exhausted when she came home, but was SO happy! FYI it's gonna be a Beanie Boo kind of Christmas this year.
Sunday I made some home made hand warmers for gifts. Little "pillows" stuffed with rice, that you can microwave for 15 seconds at a time until desired heat is reached. Nice for getting or keeping your hands warm or for aches and pains. Not sure where this sewing bug has come from although I know I wouldn't want to do it for a living...no patience! HA!
Monday was Home made hand scrub day. I saw that my friend Staci over at Lizzard and Ladybug made these and knew they would be a great gift for teachers and friends. Small mason jar, fill 3/4 full of sugar then cover top with moisturizing soap (I found some peppermint soap in Target's dollar spot), stir and add more soap if needed. I found these great spoon/scoops made by Dixie and paired one with each jar.
Tuesday, I get a text from my DH and he wants to know if I know how to make fudge.....PaLEase!!!
Guess who made 3 different flavored batches of fudge for their hubby to take to work that night.
Dark Chocolate Fudge
Melt together over double boiler:
3 C Semi Sweet Chocolate Chips
1qty 14oz can of Sweetened Condensed Milk
2 C Small Marshmallows
Add a dash of salt + 1tsp Vanilla
Pour into a 9" x 9" parchment lined baking pan and chill for at least 2 hours then cut & try not to eat the whole pan at once.
Wednesday night I wanted something easy for dinner that would give up some left overs for a couple of days. Voila the lasagna casserole!
3-4 C cooked Elbow Noodles
1lb cooked Ground Beef
1lb cooked Italian Sausage
45 oz Pasta Sauce
24 oz Cottage Cheese
4-6 C of Shredded Mozzarella Cheese
Preheat oven to 350 degrees.
Mix the cooked ground beef and italian sausage together with the sauce.
Layer ingredients into a 9"x 13" pan.
Start with a skimpy layer of sauce (just to keep the noodles from sticking)
then a layer of plain noodles
layer of cottage cheese
layer of mozzarella cheese
layer of sauce
repeat and add a layer of mozzarella to the top.
Bake for 20 minutes or until bubbly.
Thursday we surprised Aly with a new dress and a visit to see Santa. I can't believe my baby is almost 9 years old. She told us that a lot of her friends don't believe, but she still does. I cried...
