I have been making this dish for quite some time now and it is still one of our favorites.
3 cooked chicken breasts cut up into bite size pieces
1 can Cream of Chicken soup
1 can Green Chili Sauce ( I use a small can of Stokes)
1/4 C Sour Cream
Shredded Mexican Cheese
Extra Sour Cream
Combine the cooked chicken, cream of chicken soup, green chili sauce and sour cream. Spray a 9"x9" baking dish with cooking spray. Place a layer of tortilla chips in the bottom of your baking dish, then spoon the chicken mixture over the top. Sprinkle a 1/2 to 1 cup cheese over the top of casserole then bake at 350 degrees for 20-30 minutes or until bubbly.
Serve casserole on top of a bed of shredded lettuce, top with salsa, shredded cheese & sour cream. Serve with a side of tortilla chips.
A great recipe that you can make ahead of time, refrigerate then bake later (within a day or two at the most).
