Easy Blueberry Lemon Cupcakes AND Free Printable Toppers

SO moist and most importantly super easy!! Give these blueberry lemon cupcakes a try.

Blueberry & Lemon Cupcakes
Preheat oven to 350 degrees

Mix together the following
1 box of white cake mix ( I used Pilsbury Classic White mix, with pudding)
1 can of blueberry pie filling
2 eggs
1 tsp lemon extract

Place cupcake wrappers in cupcake tin and fill each wrapper 1/2 full of cupcake batter. Bake for 18-20 minutes (depending on your oven). Be sure to check with a toothpick to see if they are done, the looks on these are deceiving and will burn before you know it.  When done, put onto a cooling rack then place in a container and put in fridge until ready to serve.

Lemon Buttercream Frosting
Beat together

1/2 cup of room temperature butter (soft, but not melted)
2-3 cups of powdered sugar (add slowly one cup at a time)
2 tsp lemon extract
2-3 Tbls whipping cream


Frosting should be light and fluffy. Add to chilled cupcakes right before serving. Refrigerate any left overs or if you need to double the batch of frosting if you like to pile it on to each cupcake!

Party Starters Birthday Bash 2011

Hard to believe it has been two years, but here it is...Party Starters 2nd birthday! I am celebrating all week, and to start the festivities I have some freebies...

I am SO in love with the pattern "Chevron" and have been for the past couple of months. So I decided to go back to my roots (I started out as a greeting card designer) and create a note card set using the Chevron pattern and a simple sentiment, "Thank You".  Every party should end with a thank you card in the mail, right?!

Scallops Scallops Everywhere!

I am SO excited about a couple of new products I have to introduce to you. Today my scalloped bunting, this one was made for a baby shower. This bunting has a nice vintage feel to it and I can't wait to play around with it a bit more. I think it will look really cute with ric rac and dressed for a boy as well!
 
More SCALLOPS, I also have a scalloped popcorn box, but can't show you until tomorrow. WHY??? because the photo I took of it, is holding a sweet treat which I am posting about tomorrow over at Pink Little Cake. I can't wait to show you all and share a family recipe as part of Kathia's mini blog series called "28 days of SWEET Halloween ideas".  Hop on over and check out today's yummy treat!
