Tasty Treats Thursday {Kathia's Cupcakes}

Hi everyone, I am Kathia from Pink Little Cake Blog and Pam has invited me over as a guest blogger today. I am excited to be here. Since I have been in party mode for the past 2 weeks celebrating my daughter's birthday ,I thought it would be nice to show you what I did for her DayCare party.
Chocolate cupcakes with Vanilla Buttercream 
topped  with a fondant letter
 
For the chocolate cupcakes I used this%20recipe
I have found that it is my favorite
chocolate cake , delicious and moist.
 To make the fondant letters simply roll out a piece of  fondant ( any color you want) to 1/4″ thick and 
cut out the letters. I used my Alphabet%20Cutters%20Set%20by%20Ateco.%20
If you feel that the letter cutters are sticking to the fondant , just add a little cornstarch. Next use a brush to add luster dust to the fondant, do this step if you want, I personally think a little sparkle doesn't hurt.
Let the letters dry slightly before adding them to the cupcake or else they won’t hold their shape.
And here is my the final cupcake creation!
Vanilla frosting
(This is an old recipe I found somewhere that I didn't remember)
4 oz. unsalted softened butter
2 1/2 c. or 10 oz. powdered sugar
1/2 t. kosher salt
1 T. plus 1 t. whole milk
1 t. pure vanilla extract
1 t. fresh lemon juice (I put 1/2 t.)

In a stand mixer, fitted with a paddle attachment, cream the butter & salt for about 30 seconds and then add half of the powdered sugar and the milk to the butter and beat again until combined. Scrape down the bowl. Add the rest of the powdered sugar, the vanilla, and the lemon juice and beat until combined. Scrape down the bowl again. Beat on high speed for 5-6 minutes or until the frosting is fluffy. Stir the buttercream well before using it to get the air bubbles out of the frosting.
